Breakfast Casserole


1 pound bacon
1/4 cup diced onion
1/4 cup diced green bell pepper
3 cups shredded cheddar
8 eggs
2 cups milk
1 (16 ounce) package frozen hash brown potatoes, thawed
Pepper, to taste

1.  Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch casserole dish.

2.  In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion and green pepper. Stir in the thawed hash browns. Pour mixture into prepared casserole.

3.  Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set.

German Pancakes

1 c milk
¾ c flour
1 t salt
6 eggs
½ cube margarine

Melt margarine in glass pie plates or pan.  Beat eggs.  Add milk.  Add salt and flour.  Beat hard.  Dump into pan and bake 15-20 minutes at 425.  top with syrup.

Pioneer Woman's Cinnamon Rolls

 
Ingredients:
  • 1 quart Whole Milk
  • 1 cup Vegetable Oil
  • 1 cup Sugar
  • 2 packages Active Dry Yeast
  • 8 cups (Plus 1 Cup Extra, Separated) All-purpose Flour
  • 1 teaspoon (heaping) Baking Powder
  • 1 teaspoon (scant) Baking Soda
  • 1 Tablespoon (heaping) Salt
  • 3 cups (to 4 Cups) Melted Butter
  • 2 cups Sugar
  • Generous Sprinkling Of Cinnamon
    _____
    MAPLE FROSTING:
    1 bag Powdered Sugar
    2 teaspoons Maple Flavoring
    ½ cups Milk
    ¼ cups Melted Butter
    ¼ cups Brewed Coffee
    ⅛ teaspoons Salt
Directions: Mix the milk, vegetable oil and sugar in a pan. “Scald” the mixture (heat until just before the boiling point). Turn off heat and leave to cool 45 minutes to 1 hour. When the mixture is lukewarm to warm, but NOT hot, sprinkle in both packages of Active Dry Yeast. Let this sit for a minute. Then add 8 cups of all-purpose flour. Stir mixture together. Cover and let rise for at least an hour.
After rising for at least an hour, add 1 more cup of flour, the baking powder, baking soda and salt. Stir mixture together. (At this point, you could cover the dough and put it in the fridge until you need it – overnight or even a day or two, if necessary. Just keep your eye on it and if it starts to overflow out of the pan, just punch it down).
When ready to prepare rolls: Sprinkle rolling surface generously with flour. Take half the dough and form a rough rectangle. Then roll the dough thin, maintaining a general rectangular shape. Drizzle 1 ½ to 2 cups melted butter over the dough. Now sprinkle 1 cup of sugar over the butter followed by a generous sprinkling of cinnamon.
Now, starting at the opposite end, begin rolling the dough in a neat line toward you. Keep the roll relatively tight as you go. Next, pinch the seam of the roll to seal it.
Spread 1 tablespoon of melted butter in a seven inch round foil cake or pie pan. Then begin cutting the rolls approximately ¾ to 1 inch thick and laying them in the buttered pans.
Repeat this process with the other half of the dough. Let the rolls rise for 20 to 30 minutes, then bake at 375 degrees  until light golden brown, about 15 to 18 minutes.
For the frosting, mix together all ingredients listed and stir well until smooth. It should be thick but pourable. Taste and adjust as needed. Generously drizzle over the warm rolls.

Banana Nut Muffins

 
1 banana or spice cake mix
2 eggs
1 c water
1/3 c chopped nuts
1/3 c vegetable oil
1 md banana mashed

Pre heat oven 350. 

Place liners in muffin tin.  Mix cake mix, eggs, water, nuts, oil and banana in large bowl.  Fill muffin tins ¾ full.  Bake 20-25 minutes

Quick and Easy Cornbread

 
1 small box cornbread mix
1 yellow cake mix

Mix boxes together according to directions on box.  Pour batter into greased 9x13 inch pan

Bake approximately 25-35 minutes or  until done

Oatmeal Raisin Muffins

 
1 yellow cake mix
1 1/3 c water
1/3 c vegetable oil
2 lg eggs
2 c quick oats
1 c raisins
½ c chopped nuts
1 ½ t cinnamon

Pre heat oven to 350

Grease and flour muffin pan or use muffin cups.  Mix together cake, water, oil, eggs and oats in large bowl until well blended.  Stir in raisins, nuts and cinnamon, Fill cups ¾ full with batter. 

Bake 20-25 minutes

Silver Dollar Oatmeal Pancakes


1/2 c flour
1/2 c quick oats
1 1/2 t sugar
1 t baking powder
1/2 t baking soda
1/2 t salt
1 egg
3/4 c buttermilk
1/2 c cinnamon applesauce
2 T melted butter

in large bowl combine dry ingredients.  in small bowl, beat egg, buttermilk, applesauce and butter.  stir into dry ingredients just until moistened. 
pour batter by 2 T onto lightly greased hot griddle, turn when bubbles form on the top.

Buttermilk Pancakes


2 c flour
2 t baking powder
1/2 t soda
1/2 t salt
3 T sugar

3 c buttermilk
4 T melted butter
2 large eggs

in large bowl mix dry ingredients.  in a separate bowl mix wet ingredients then add dry ingredients. heat skillet to medium high,
may also add blueberries!

German Pancakes


1 c milk
1 c flour
6 eggs
1/4 t salt
6 T butter

Melt butter in 9x13 pan  in oven at 400 .  take out when sizzling and dump batter in.  put back in oven and bake 20-25 minutes or till golden brown.

Thick Pancakes

2 c flour
1/4 c sugar
4 t baking powder
1/2 t salt
2 eggs
1 1/2 c sour cream
1/3 c melted butter

Mix dry ingredients in a separate bowl. beat eggs.  Mix in the rest of the wet ingredients.  until blended then add to dry ingredients.

Crepes


1 Egg
1 cup Milk
2 cups Flour, all-purpose
Pinch of salt

Blend all ingredients until smooth.
Lightly grease an 8" non-stick skillet.
Pour batter in until it just covers bottom of skillet to form a thin layer.
Tilt pan to spread batter evenly for each crêpe.
Cook over medium heat until firm.
Cool crêpes.
Top with WHATEVER!!
e.g. fruit, jellies, seafood, endless possibilities!

Sticky Buns


1/2 c. chopped nuts (optional)
18 frozen Rhode's rolls
small pkg. butterscotch cook n' serve pudding
1/2 c. margarine, melted
3/4 c. brown sugar
1/2 tsp. cinnamon

Grease bundt pan and sprinkle with nuts, if desired. Mix pudding mix (just powder, don't add milk), margarine, brown sugar and cinnamon. Put rolls in bundt pan and pour mixture over rolls. Cover with foil-leave overnight. Bake at 350* for 30 min. Cover for the last 10 minutes. Immediately turn rolls out onto a plate. Yummy, gooey goodness!!

German Pancakes


6 eggs
1 c. milk
1 c. flour
4 tbsp. butter (1/2 a cube)
sprinkle of salt

While oven is preheating to 400*, melt the butter in the pan in the oven. Whirl the rest of the ingredients with a wire whisk. Pour the egg mixture into the hot pan and quickly return to the oven. Bake for 20 minutes. Top with maple syrup, or powdered sugar

Crepes


1 cup flour
1 1/2 cup milk
2 eggs
1 Tbsp. oil
1/4 tsp. salt

In a bowl, combine flour, milk, eggs, oil, and salt. Beat until blended. Heat a greased skillet. Pour small amount of batter (approx. 1/2 cup) into skillet. Tilt skillet to spread batter evenly. Return to heat. Brown crepes on both sides. Top with desired toppings.
