Onion Rings

  • 2 cups buttermilk
  • 2 eggs, beaten
  • 1 teaspoon kosher salt
  • 1/4 teaspoon fresh cracked pepper
  • 1 large Walla Walla onion cut into 1/4 inch slices, separated into rings
  • 1-1 1/2 cups flour
  • 1/2 -1 cup panko bread crumbs
  • 1 1/2 teaspoon seasoning salt
  • canola oil for frying
  1. In a bowl combine buttermilk, eggs, salt and pepper. Add onion rings, make sure they are covered with buttermilk mixture. Cover and refrigerate for at least 2 hours.
  2. In a freezer bag combine flour, bread crumbs and seasoning salt.
  3. Heat 1 inch of oil in a large sauce pan over medium heat.
  4. Place several of the marinated onion rings in the bag. Seal. Shake bag to coat. Shake each onion ring to remove excess flour and bread crumbs. Repeat with remaining onions adding more panko or flour as needed.
  5. Sprinkle a bit of flour into the oil, if it sizzles the oil is ready. Fry the onion rings in batches until golden brown, about 2-3 minutes. Be careful not to over crowd the pan. Transfer to paper towel lined plate. Sprinkle with kosher salt, if desired.
  6. Serve hot with your favorite dipping sauce.

Baked Beans


cover with cold water-4 c dry navy beans
soak overnight or bring slowly to a boil
simmer until tender
drain
add:
1 small onion chopped
1/4 lb salt pork, diced
3/4 c brown sugar or molasses
1/2 c ketchup
1 t dry mustard
2 t salt
1 T soy sauce
1 c boiling water

place in greased casserole dish
top with 1/4 t salt pork cut in srips

bake at 275 for 6-8 hours.  uncover for last hour.
if beans become dry add extra water

Creamy Mashed Potatoes

Prep time: 45 minutes
Ingredients:
Potatoes:
  • 4 c. prepared instant potatoes
  • 1½ c. shredded cheddar cheese
  • ½ c. sour cream
  • ¾ c. parmesan cheese
  • 9 slices of bacon, fried and crumbled
  • ¼ c. onion, chopped finely
  • salt and pepper, to taste
  • 1 clove of garlic
Topping:
  • ¼ c. butter, melted
  • ¼ c. grated parmesan cheese
  • 3 slices bacon, crumbled
  • 1 c. dry bread crumbs
Directions:
  1. Preheat oven to 350° Fahrenheit.
  2. In a large bowl, mix together mashed potatoes, cheddar cheese, sour cream, parmesan cheese, bacon, onion, salt, pepper, and garlic.
  3. Place potato mixture in a greased 2-quart casserole dish.
  4. To make the topping, place the melted butter, parmesan cheese, bacon, and bread crumbs in another bowl and mix well.
  5. Spread topping mixture over potato mixture.
  6. Bake for 30 minutes or until topping is golden brown.
Serves: 10

Creamy Mac and Cheese

Prep time: 20 minutes
Ingredients:
  • 6 c. water
  • 1 (7.25 oz.) package of macaroni and cheese dinner
  • ¼ c. butter
  • ¼ c. heavy whipping cream
  • 2 tbsp. skim milk powder
  • ½ c. cheddar cheese, shredded
Directions:
  1. Boil the water in a medium pan.
  2. Stir in the macaroni.
  3. Boil for 7 to 10 minutes, stirring occasionally.
  4. Drain the macaroni and return it to the pan.
  5. Add butter, whipping cream, skim milk powder, cheese, and cheese sauce mix (from the macaroni and cheese dinner package).
  6. Reduce heat to low and mix well until the cheese has melted.
Serves: 3

Scalloped Potatoes

Prep time: 30 minutes
Ingredients:
  • 4.9-oz. box of scalloped potato mix
  • 1-2/3 c. boiling water
  • 1 c. heavy cream
  • 3 tbsp. butter
  • 1 c. cheddar cheese
  1. Heat oven to 450° Fahrenheit.
  2. In ungreased casserole dish, combine potatoes and sauce mix, water, heavy cream, butter, and cheese.
  3. Bake uncovered for about 20 minutes or until top is light golden brown and potatoes are tender.
  4. Remove from oven. Sauce will thicken as it stands.
Serves: 5

Au Gratin Potatoes

10 medium potatoes
½ c margarine
10 ½ oz cream of chicken
2 T onion flakes
1 c sour cream
2 c grated cheese

Boil potatoes. Skin and shred into 9x13 pan.  In saucepan melt butter.  Add soup, onions, sour cream and cheese.  Stir over medium heat until cheese is somewhat melted.  Pour over potatoes and bake for 30 minutes at 350 degrees

Onion Rings

Ingredients:
  • 1 cup complete pancake batter
  • 1/3 cup all-purpose flour
  • 2-5 T Tapatio (adjust for your taste)
  • ~3/4 cup milk (enough to make batter consistency of cake batter)
  • 1 large sweet Vadalia onion, slice into rings
  • Deep Fryer or pan with at least 3 or 4 inches of oil to fry in
Directions: Mix first 4 ingredients together and let sit for ~30 minutes. Dip onion rings into batter and drop into hot oil. Fry until golden brown. Remove from oil, place on a paper towel to drain. I like to sprinkle a little salt on them as they drain on the paper towel.

Fried Rice


 
1 envelope fried rice seasoning
2 T water
2 green onions chopped
2 T oil
1 egg lightly beaten
3 c cooked rice
½ peas

Combine seasoning and water. Set aside.  In large skillet stir fry green onions in oil for 2-3 minutes.  Add lightly beaten egg and stir until scrambled.

Add rice and peas.  Stir fry until heated through.  Stir in seasoning mixture.  Stir fry 3-4 minutes longer or until heated through.

Sticky Rice


First, you need to get the correct type of rice. You need to purchase "glutenous rice". Regular Jasmine rice or other types of regular rice will not work properly. Soak the glutinous rice in water for about 4 hours. Set up a steamer, wrap the rice in muslin, and steam for 15 minutes. Turn the muslin-wrapped rice over, and cook for an additional 15 minutes. Be careful not to over-cook the rice, or it will become quite mushy. The consistency you're looking for is slightly sticky, but not watery. The rice should hold together, but individual grains can still be easily seperated.

baked beans


1 lb hamburger with onion
3/4 c ketchup
2 T mustard-prepared
1/4 c brown sugar
4 T molasses
4 cans pork and beans

mix and add to crock pot or dutch oven-cook 4 hours on low

Ranch Potatoes


4 med. potatoes, cubed
1 cup ranch dressing
1/3 c dry bread crumbs
salt and pepper to taste

Toss potatoes with dressing, salt and pepper. Place in greased 13x9 inch dish. Sprinkle with bread crumbs. Cover and bake at 375 degrees for 30 min. Uncover and bake 20 min longer or until tender

Scalloped Potatoes


5 large potatoes, peeled and thinly sliced
3/4 c. chopped onion
3 tbsp. butter or margarine
1/4 c. all-purpose flour
1 3/4 c. chicken OR beef broth (I have used both and both turn out really good)
2 tbsp. mayonnaise
3/4 tsp. salt
1/8 tsp. pepper
paprika

In a greased 2-1/2-qt. baking dish, layer potatoes and onion.

In a saucepan, melt the butter; stir in flour until smooth. Gradually add broth, mayonnaise, salt and pepper; cook and stir for 2 minutes or until thick and bubbly. Pour over potatoes. Sprinkle with paprika.

Cover and bake at 325 degrees for 1 1/2- 2 hours or until tender.
