Peanut Brittle

2 c sugar

1 c karo syrup

1 c water

¼ t salt

3 T butter

1 lb Spanish peanuts

2 t vanilla

1 ½ t baking soda

Butter two cookie sheets.  Combine baking soda and vanilla in a cup and set aside.  Combine sugar, water, and karo in a large heavy pan.  Cook until the softball stage.  Stir in butter and peanuts; stir constantly until the hard crack stage.  Remove from heat and add soda and vanilla;  Stir quickly in and pour half onto each pan and spread thin.  Break when it is cold
