smore sandwich cookies

 

3/4 c butter softened

1/2 c sugar

1/2 c packed brown sugar

1 egg

2 T milk

1 t vanilla

1 1/4 c flour

1 1/4 c graham cracker crumbs

1/2 t baking soda

1/4 t salt

1/8 t cinnamon

2 c chocolate chips

24-28 large marshmallows

in large bowl cream butter and sugar until light and fluffy.  beat in egg, milk and vanilla.  combine the flour, graham crackers, baking soda, salt and cinnamon.  gradually add creamed mixture and mix well.  stir in chocolate chips. 

drop by tablespoon onto ungreased baking sheet.  bake at 375 for 8-10 minutes. 

place four cookies face down in microwave, top each with a marshmallow.  microwave uncovered about 10-15 seconds.  top each cookie with another cookie.  repeat.  makes about 2 dozen
