1 lemon cake mix
1/3 c vegetable oil
2 eggs
1/2 gallon vanilla ice cram
preheat oven to 350. with spoon mix ingredients, except ice cream. drop balls on to ungreased cookie sheet. bake 8-12 minutes. leave on sheet to cool. remove cookies and place on nonstick rack to cool
once cooled, place a scoop of ice cream between two cookies. wrap in plastic wrap. store in airtight container in freezer. makes 16-18 ice cream sandwiches
