Mongolian Beef


sauce:
1/4 t minced ginger
3-4 cloves minced garlic
1/4 c soy sauce
1/4 c water
1/3 c brown sugar
red pepper flakes (to taste)
1 t corn starch

1 lb flank or round steak
1 bunch green onion

slice the beef against the grain into slices.  brown the beef in some oil in a very hot pan.  once in the pan don't move it around until it has a nice dark crust.  cook till rare (don't overcook) set meat aside and add salt.  in saucepan saute garlic and ginger in oil over low heat.  (don't brown garlic).  add soy sauce and h2o-then dissolve brown sugar into mixture.  add pepper flakes and simmer 5-10 minutes.  in separate bowl put a little sauce and dissolve the cornstarch then add back to mixture.  heat pan used to cook beef add 1/3 h2o to deglaze.  add sauce and turn to low-1 minute.  add green onions, cook untill they wilt.  add meat with h2o while deglazing.
